Hey guys! As you may know, I have been a vegetarian for around 8 years. I will pre-emptively answer the question I am always asked – why? I am just a big, soft animal lover. One day, I was at a petting farm, stroking an adorable lamb, and it struck me that I just couldn’t carry on eating meat. I don’t judge those who do eat meat (including my husband, who is a big meat and fish lover!) but it just isn’t the right thing for me. So all of the recipes or food pics I share on this blog will be vegetarian. But still very tasty!
Tonight, hubby and I wanted something quick and easy to eat. I am having quite a bad M.E phase and he has a bit of a cold, so we didn’t have much energy to spare for cooking. We decided on a quick but tasty pasta bake. We did not use a recipe, but here is what it roughly was:
- 300g pasta (enough for 4 portions – lunch tomorrow sorted, yay!)
- 1 large jar of Dolmio spicy bolognese sauce
- Green olives
- Small amount of red chilli
- Mozzarella (melted on top)
- Extra salt, pepper and mixed herbs.
We cooked the pasta the usual way for around 10 mins, then added everything listed above (apart from the mozzarella) into a large ceramic oven dish. We shredded the mozzarella over the top and put it in the (fan) oven at 180C for 30 minutes. If you have a regular oven, it would be 200C.
I hope this recipe can be useful for any spoonies who need something quick and easy, when there is no energy to spare! (Or of course, anyone who fancies making it!)
